As a Pacific Northwest native and an Asian, it’s in my blood to love seafood. Oddly enough, it’s my tall, dorky, handsome, and WHITE husband who has really brought my love of oysters to surface. I am very fortunate that he enjoys shucking oysters at home and that we live in a place that supplies us with grocery stores full of delicious and safe shellfish. This also provides an easy route to eat lots of them at nearly wholesale cost, plus we know they’ve been properly shucked with the oyster liquor intact!
However; today at lunch (Matt’s Rotisserie and Oyster Lounge) we saw Shigoku oysters on the menu and were unable to resist despite the $25.99/dozen price tag. This particular oyster is not a frequent find, so we are well-trained to “BUY BUY BUY” when we see them. And they did not fail anxious tastebuds; the smooth deep shells held a massive amount of salty liquor that hit my tongue with a splash of cucumber. Since it was the middle of the day on a quick lunch break, we only enjoyed ONE dozen, but they were gone as soon as they had arrived.
